Veggie & Shrimp - 2020 Healthy Recipe
The New Year is all about improvement and freshness. Eating healthy is a big part of having a great day and even better year. While some people go for quick weight loss trends I prefer having a healthy lifestyle long-term. This means more of fresh ingredients that include fruits, veggies, healthy fats and proteins and less of processed foods, fried foods, too much sugar and unhealthy fats. Think about the fact that what you eat today can impact the life you have 20 years from now in a negative or positive way depending on the effort you put in.
Today I want to share with you a quick an easy 25 min veggie and shrimp recipe to kick off your New Year right. You can watch me cook this live on my YouTube channel @grubitup.
1 husk of corn (you can utilize frozen corn if you like)
1 fresh lemon
1 pound of red shrimp ( use whatever protein you want, tofu, chicken, beans etc.)
pico de gallo
yellow and orange tomatoes (use as many as you want)
brown rice ( I used one bag of "Success Brand Boil-in-Bag Brown Rice")
drizzle olive oil in your pan of choice on a low/medium heat
boil your bag of rice on the stove and follow the instructions until completion
season your shrimp to your liking
add your shrimp to the pan and stir them around
slice your corn and add it to the shrimp and stir
add your zucchini (let that simmer for 2 min and add a bit more olive oil)
add 2 - 3 pinches of minced garlic and stir
add the tomatoes after the first 10 minutes and stir
squeeze half of a fresh lemon (squeeze hard it's fine)
add two handfuls of pico de gallo put the lid on your device for 2 min for simmering
remove the lid and stir
plate or bowl your rice and add the yummy shrimp and veggie mixture on top
slice your avocado on top and enjoy!
